Pan con pollo is one of the most loved dishes in Salvadoran cooking. French bread filled with chicken cooked in tomato sauce, pickled vegetable escabeche, and a touch of mayonnaise. It is more than a sandwich — it is a full meal.

The dish

What pan con pollo is

If you have never had pan con pollo, the best way to explain it is: a piece of French bread filled with all the flavor of a Salvadoran stew. It has:

  • Slow-cooked chicken in tomato sauce with onion, pepper, and spices
  • Escabeche — pickled vegetables (carrot, green bean, cauliflower) that give it the acidic contrast
  • Mayo, mustard, lettuce, and sometimes watercress
  • French bread soft inside, browned outside, that soaks up the sauce
It is more than a sandwich — it is a full meal.

It is not fast food. The chicken is cooked for hours the day before, the escabeche is prepared in advance, and the bread is filled to order. When you bite into it, all the flavors come together.

Tradition

When it is eaten

In El Salvador, pan con pollo is event food: birthdays, novenarios, family celebrations, Christmas Eve. People associate it with special moments.

We have it on the regular menu because for the Salvadoran community in Houston, you should not have to wait for an event to eat it. Available Monday through Saturday, every day we are open.

On the table

How pan con pollo is served

Each order comes with:

  • A complete pan con pollo (filled French bread)
  • Extra sauce on the side, in case you want more
  • Extra napkins — because you will need them

Eat it with your hands. And yes, you will get a little messy — that is part of the experience.

Frequently asked questions

Is pan con pollo like a sandwich?

Not exactly. Visually it looks like a large sandwich, but the chicken comes cooked in sauce, with pickled vegetables, and the sauce soaks into the bread. It is closer to a stew served inside bread than to a dry sandwich.

Is it spicy?

No. It is a deep-flavored dish (tomato, spices, escabeche) but not spicy. If you want heat, you can ask for chile on the side.

How filling is one pan con pollo?

One pan con pollo is substantial — enough for one person with a good appetite. Many people pair it with horchata or an atole.

Can I order it to-go?

Yes. We pack it with the extra sauce on the side so the bread does not get too soggy. If you are going to eat it later, we recommend warming it in the oven for a few minutes before serving.

When is it available?

Every day we are open — Monday through Saturday. We are closed Sundays.
